Simple Pesto

Whole wheat shrimp pasta with pesto sauce

Sauces of all kinds are great for working people. They're fairly simple to make, can be used in a wide array of dishes, and can be preserved for quite a few days - if it lasts :).

Pesto is a sauce that is easy to make and is versatile. It can be used on pasta, sandwiches, wraps, salads and just about anything you want it on. And the aroma of fresh basil is just divine.

Recipe (Makes 1/3 cup)

Ingredients
Quantity
Fresh Basil
0.66 Oz
Walnuts/ Pine Nuts
¼ cup
Parmigiano Reggiano/ Romano Cheese
¼ cup
Garlic
1 clove
E. V. Olive Oil
1/8 - 1/4 cup
Salt
To taste
Freshly ground pepper
To taste



Add the nuts and the cheese to the food processor and pulse a few times, till the resulting mixture has been coarsely ground. Drizzle in the olive oil while ‘stirring’ the mixture. Then add the fresh basil and garlic and blend till all the ingredients mix together. Finally add the salt and freshly ground pepper.

There can be variations of this basic pesto with addition of mint or cilantro as well.
